We would never dream of telling you how to enjoy Eight Lands. After all, even the team at the distillery each have their own favourite serves!

However, here are some of our signature serves if you are looking for some inspiration.

Speyside Vesper

Originally inspired by James Bond's love interest in Casino Royale, the Vesper is a superb variation on a Martini. Our take on this classic is made even better by the inclusion of both our Speyside gin and vodka together in balance. Remarkably smooth and HMRC approved (our distillery, that is).

Recipe

Eight Lands Organic Gin 25ml. Eight Lands Organic Vodka 25ml. Dry white vermouth 10ml. Unwaxed lemon peel garnish.

Method

Martini glass (chilled). Stir all ingredients over ice for a while (or shake if preferred). Strain into chilled glass. Garnish with a twist.

ESPRESSO MARTINI

Dick Bradsell invented this for a famous model during the 1980’s in London. Our version is using a premium and refined coffee liqueur to take it up a notch.

Recipe

Eight Lands Organic Vodka 35ml. Freshly brewed single shot of espresso. Fair Café Liqueur 15ml. Sugar Syrup 5ml. Espresso beans to garnish (3).

Method

Martini Glass. Dry shake all ingredients. Add ice and shake again until cold. Strain into a chilled martini glass. Garnish with espresso beans.

FRENCH 75

A delicious and luxurious style of champagne cocktail. The French 75 has many suggested origins, but it was made famous at Harry’s Bar in Paris in the 1920’s. We thought we’d give Harry, who hailed from Dundee, a version using gin from his Scottish roots.

Recipe

Eight Lands Organic Gin 35ml. Fresh Lemon Juice 15ml. Sugar Syrup 10ml. Brut Champagne. Lemon triangle garnish.

Method

Champagne Coupe. Stir gin, lemon juice and sugar syrup over ice to chill. Strain into coupe. Top with Champagne. Garnish with lemon triangle.

SPEYSIDE COSMOPOLITAN

Made famous in the 1990’s by a popular American TV show, the Cosmopolitan roots hail back to the 1930’s. Our version takes cues from recipes both old and new, showcasing the flavour and texture of a premium vodka with the right balance of citrus to complement.

Recipe

Eight Lands Organic Vodka 40ml. Grand Marnier 10ml. Fresh lime juice 10ml. Cranberry juice 10ml. Garnish with a lime wedge.

Method

Nick & Nora cocktail glass. Shake all ingredients over ice. Strain into chilled glass. Garnish with lime.

EIGHT LEAF CLOVER

Bringing a vintage classic to the modern era with Eight Lands’ approach to mindful production. Using Discarded vermouth adds a subtle coffee note to this velvety raspberry sour serve.

Recipe

Eight Lands Organic Speyside Gin 50ml. Discarded* vermouth 20ml. Sugar syrup 10ml. Fresh lemon juice 15ml. 4-5 fresh raspberries. Egg white 20ml. Fresh raspberry. Angostura bitters to garnish.

Method

Coupette. Shake all ingredients over ice. Double strain in to chilled glass. 3 drops of bitters garnish.

*Any good sweet vermouth can be used if Discarded unavailable

negroni

Was it the Count or the bartender who invented this drink during the 1910’s in Florence? The truth has been lost to time, but one thing is sure - swapping out the soda water for gin was genius.

Recipe

Eight Lands Organic Gin 20ml. Campari 20ml. Dolin Sweet Vermouth 20ml. Orange peel garnish.

Method

Rocks glass. Stir all ingredients down over ice. Strain into rocks glass over fresh ice. Garnish with orange peel.

SPEYSIDE HIGHBALL

A simple vodka and tonic that is elevated by the slightly salty and sour notes of the Sherry wine. Incredibly moreish and refreshing.

RECIPE

Eight Lands Organic Speyside Vodka 50ml. Amontillado sherry 10ml. Top with tonic water and a lemon slice garnish.

METHOD

Highball. Build in glass.

vodka ritual

An incredibly British approach to drinking vodka. This social ritual plays with the subtle flavours of Eight Lands and the malty, creamy and sweet notes of the scone and clotted cream. A real treat.

Recipe

Frozen Eight Lands Organic Speyside Vodka 60ml. Scones with clotted cream and jam.

Method

Freeze vodka for at least 4-6 hours. Serve with scones.
Sip, eat, repeat.

RASPBERRY HIGHBALL

A pleasant and refreshing twist on the classic G&T. The tartness of the raspberry alongside the gin is a revelatory experience.

Recipe

Eight Lands Organic Speyside Gin 50ml. Raspberry liqueur 10ml. Top with tonic water. Raspberry and lemon wheel garnish.

Method

Rocks glass. Stir down. Strain into glass over ice.
Garnish with lemon wheel.
